Obviously it was because Shannon called him "Boone" while they were having teh sex0r the previous night. Then when Sayid went to Sawyer for consolation!sex0r, Sawyer called him a mixture of "Kate" and "Jack" that sounded something like "Kack" and Sayid was offended and ran away.
